You likely encountered a shared neutral between more than one circuit. You have to switch off the breakers for all the circuits that share the neutral.

A hobbyist should not screw with a Triac on house wiring if it will be “permanently” installed in a junction box. Make an adapter that plugs into a socket on the outside so that it is clear it is not a normal outlet. If you have to homebrew something like this use a good relay or contactor with a UR approval. AND read the spec on it thoroughly.
There are people that play with high voltage stuff like Tesla coils, induction heaters etc. Now those know enough to respect high voltage.
Agreed, the component is under rated from the start. If you look at a datasheet from a 25A SSR from a better company you will find something like de-rating curves which really show that as you move from the ideal conditions (20C temp, infinite heatsink) you should only use a smaller load. It is pretty easy to reach a limit of half the max load in normal conditions.
TJ may also want to mention on his project page that without a choke, the TRIAC will dump out a ton of EMI (that’s why most commercial dimmers have to have a choke in series with the load to be able to get FCC certification).
