Heat pumps are good as pre-warmers but it’s hard to get really hot water from one without wasting a lot of electricity in the process as you exceed the “point of diminishing returns”. Natural Gas is still the cheapest most efficient way to heat water because it’s fairly easy to make a 95% or better efficiency burner. In Canada you’d likely have to go geothermal which in most cases is nothing but a heat pump hooked to an underground water loop

The reason may be the cost of getting UL approval. You can buy off-the-shelf, UL approved, 12/24VDC power supplies. Once you are working with 12/24VDC most products don’t need further UL approvals. But — if everything is mains power you are going to have to pay for a new round of UL testing. That can be $10,000 or more.
The standard in UK is 230 V not 240 V, like the the rest of the EU. The continent was mainly using 220 V until 1986 and UK 240 V until 1986. The 230 VAC was choosen by the IEC as a compromise between the 220, 230 and 240 system. So actually main voltage in EU should be 230V +/-6% at distribution panel, and equipement should support 230V +/-10%. (voltage drop in the internal house distribution should be less than 4%) But a transition period of 20~25 years was used, during the transition period main voltage at distribution panel in UK should be in the 230 VAC +10%/-6% range, and in the rest of EU it should be in the 230 VAC +6%/-10% range. (Other 240 VAC country like Australia and NZ switch to 230 VAC at least officialy)
Ultimately under-rating won’t solve the problem. The Chinese scammers are already putting below-rated parts in, because they assume most users will under-rate anyway, so they’ll get away with it. If, in response to that, you under-rate even more, and this becomes mainstream, what do you think will happen? They’ll just take it into account, same as ever, and the 75A parts you’re putting 40A through, because you want to be careful, will only contain 20A triacs.
I seem to remember one test video I saw online, possibly BigClive, finding that the actual rating on the faux-Fotek SSR that he was dissecting was rated at around 10A, in a 25A labeled SSR. I believe it was also a MOSFET instead of the SCR or TRIAC that it was supposed to have, as well.
